I'm Insulin Resistant, I guess that means pre-diabetic, I'm not sure. This is what I ate and dropped 40 pounds in 4 months. I never felt deprived, antsy, jittery, never craved anything.
I crisped up 100% whole wheat tortilla's in the frying pan. I heaped a pile of spinach on top. Cheddar cheese on top Reading the label on shredded cheese I nearly fell over. Potatoe starch! Yikes, thanks but no thanks, I'll shred myself.
Sometimes I put tomatoe sauce on the crisped tortilla, basil, spinach & homemade shredded cheese. Pop it in the microwave til the cheese is melted, enjoy.
