I know those who cooked over the holiday worked harder than if you went to work!
So let's talk easy meals and dare I say take out!
I have an easy to make "Chinese take out" meal I may just make this week! I'm tired.

Mock Chop Suey Casserole
1 lb ground beef or ground turkey
3/4 C. chopped onion
2 C. chopped celery
1 can cream of chicken soup low sodium
1 can cream of mushroom soup low sodium
1/2 C uncooked brown rice
2 cups boiling water
1 Tbls Soy Sauce low sodium
1 can chow mein noodles
Brown ground beef in a skillet; rain off excess fat. Combine with remaining ingredients, except chow mein noodles. Put into a 13x9 inch baking dish.
Bake covered at 350 degrees 45 minutes until rice is tender.
Uncover and sprinkle with chow mein noodles. Bake additional 10 minutes.
Enjoy "take out" you made with little mess to clean up!
Who's next?

I'm not sure why, maybe because of the cold here in the North East, but I only eat oatmeal in the winter.
I see it on the grocery store shelf and I think, oh that would be nice and warm and delish! I do the same for soup, make it only in the winter. In fact everytime it snows I make chicken soup!
Are there things you only eat or make in the winter months?

I heart mushrooms!
I use in my turkey gravy.
I eat them on my pizza, I love them in my salad's and prepare risotto with them. Here is a favorite of mine!
Mushroom Risotto
Ingredients
6 cups chicken broth, divided
3 tablespoons olive oil, divided
1 pound portobello mushrooms, thinly sliced
1 pound white mushrooms, thinly sliced
2 shallots, diced
1 1/2 cups Arborio rice
1/2 cup dry white wine
sea salt to taste
freshly ground black pepper to taste
3 tablespoons finely chopped chives
4 tablespoons butter
1/3 cup freshly grated Parmesan cheese
Directions
In a saucepan, warm the broth over low heat.
Warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 3 minutes. Remove mushrooms and their liquid, and set aside.
Add 1 tablespoon olive oil to skillet, and stir in the shallots. Cook 1 minute. Add rice, stirring to coat with oil, about 2 minutes. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed. Add 1/2 cup broth to the rice, and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.
Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan. Season with salt and pepper to taste.

At Christmas I am visiting my mom and sister in Florida and I want to bring little goodies in containers. The goodies have to travel well, nothing chocolate that will melt. I made the other day Toffee covered crackers....using Town House crackers. Used 1 stick butter, 1/2 cup brown sugar, crushed peanuts. This is one of example of what to bring.
I do enjoy crafts immensly but on the other hand, when I see people blog about their food and the recipes and it makes me think if I should do recipes and start blogging about food. When I craft, I somehow re-trace my steps constantly because I didnt bring my supplies to one location; front room for instance. Then I have things in the couch, counter, credenza...when I really wanted to hjave everything in one place. How did that happen...?? When I see those food blogs and things I can do.

arbob5 posted: Has anyone heard of this remedy for just about anything healthwise?Organic honey (1 teaspoon)
Organic Bragg Apple Cider Vinegar (1 teaspoon)
Once a day. Mix together..take it straight or mix with about 1/4 cup of water and heat it up in microwave, just long enough to "melt" the honey. Mix and drink.
I haven't used it yet, but I will when I pick up these products.
I have some good testimonials from friends and neighbors who have used this for quite awhile and they are all positives, from no pain (arthritis), no constipation, no diarrhea (yeah...), migraines gone or less painful, etc. etc. etc.
I have heard nothing negative, really, I mean it.
Oh yeah, one of my husband's friends is a retired chiropractor and he too has used this for years and recommended it to his patients also.
So, again, has anyone else heard of this "miracle" concoction? I'd like to know.
Thanks.View Thread
