I make a "salsa" of sorts. I don't have an exact recipe...an old co-worker's mother had made this, and I just tried to copy
black beans (can - rinse and drain) petite diced tomatoes (or fresh if you have them) red/green/yellow/orange peppers (whatever you like, for color and flavor) Onion (spring onions, white, purple - whatever you want/have) frozen corn, thawed (I prefer white corn) avacado - chopped fresh cilantro - chopped
I mix it all up, add garlic (powder and/or fresh), cumin, pepper, sea salt and a bit of onion powder. Mix again and let set overnight for best flavor infusion.
Sorry I don't have measurements...I just sort of make it with what I have....and I make it to my taste buds, so I add lots of cilantro, avacado and garlic!!
Great for crackers, tortillas, and even on a baked potato!!View Thread
