1 cup stale bread, toast crumbs, or bread crumbs (I like to use the bread heels for this) 1 cup veggies (anything works! I use whatever leftovers are in the fridge or whatever needs used up) 1/2 cup shredded cheese Olive oil (enough to make a dough) Seasonings to taste (we like Italian)
Put all ingredients in a food processor and blend until a dough forms. Drop by tablespoons onto cookie sheet and bake at 350 degrees until slightly browned.
You can mix and match/adjust ingredients to get the texture or flavor that you want. My kids love these and even more so since they're called cookies View Thread
1 lb. sweet potatoes, cut into 1 inch pieces 2 large tart apples (Granny Smith) 2 cups vegetable broth 1 cup skim milk 1 Tbsp. oil 2 Tbsp. shallots, minced 1 medium onion, chopped 1 large carrot, chopped 1 Tbsp. curry powder
Heat oil in a large pot; add shallots, onion, and carrot and saute for 5 minutes then add curry powder and stir. Add potatoes, apples, and broth. Bring to a boil, cover and turn to low heat. Simmer until potatoes are tender, about 20 minutes. Puree in a blender or food processor until smooth. Return to pot, add milk, and heat.View Thread
2 Large Apples, peeled or unpeeled, finely diced (I like Gala or Fuji but you can use any you like) 2 kiwi, peeled and finely diced 1 lb. strawberries, finely diced 1 bag frozen peaches, finely diced 2 Tbs. fruit preserves, any flavor (I like orange marmalade)
Combine all ingredients and toss lightly. Serve with cinnamon chips. Stored in a tightly sealed container, it can last several days in the fridge...but ours usually doesn't
Cinnamon Chips Cut tortillas into triangles. Spray lightly with cooking spray and sprinkle with sugar/cinnamon mixture. Bake at 350 for 5-8 minutes, watching carefully so they don't burn!View Thread
