Just a quick note that CNN TV has aired a documentary called "Escape Fire" about the U.S. health care system. Dr. Dean Ornish is one of those featured on the program.

Dr. Esselstyn ran the most effective treatment for heart disease, ever medically documented. He had 18 heart disease patients, who had 48 cardiac events in the 8 years prior to starting his diet, and zero cardiac events in the 22 years subsequent. These were worse heart patients than ususal. 5 were told by their cardiologists that they had less than a year to live, prior to starting Dr. Esselstyn's diet. Dr. Esselstyn's medical publications are listed on his website www.heartattackproof.com . He wrote a book "Prevent and Reverse Heart Disease", at the 20 year mark.
Some may criticize this study because there was no control group. Dr. Esselstyn answers that the patients are their own control group, in that they had 48 cardiac events in the 8 years before the diet.
Dr. Ornish ran a study, with a control group randomly assigned between standard medical care, and the Ornish diet and stress relief and support. Dr. Ornish did not use statin drugs, for this study. The Ornish group had half of the heart attacks compared to the standard medical care group. This is very good, but is actually not good at all, compared to Dr. Esselstyn's results.
Why did Dr. Esselstyn do so much better than Dr. Ornish? One reason is that statins are beneficial, and do reduce heart attacks and strokes, by about 27%, in randomized trials. But I do not believe that would not account for most of the difference between the two doctor's results.
Dr. Esselstyn was very strict in the diet. Ornish allows non-fat dairy, Esselstyn allows no meat, fish, poultry or dairy. Esselstyn had his patients have a cholesterol test every 2 weeks, for the first 5 years!! He watched them very closely. All the doctors (Esselstyn, Ornish, McDougall, Fuhrman, and Mr. Pritikin) have observed that the most strict patients do the best.
In my opinion, Dr. Fuhrman has improved upon the other excellent programs. Each of these initiatives are very valuable. Dr. Fuhrman emphasizes checking for deficiencies, such as vitamin D (I was severely deficient, I found out by a blood test), Omega-3 fats, and many other other less common. Dr. Fuhrman talks about meal frequency, promoting 2 or 3 meals a day, not 6. I ate 6 meals a day for 30 years, on the Pritikin diet. Animals fed fewer meals, but same total calories, live longer.
Dr. Fuhrman emphasizes eating a wide variety of high nutrient foods. Many foods are emphasized for many benefits, including anti cancer properties.
I believe, for myself, curing my vitamin D deficiency, plus changing meal frequency, cured my occasional painful dry mouth at night, my mild but genuine occasional depression, and my 30 years of very severe lactose intolerance. These things went away, and the only changes that line up with them, is the vitamin D supplementation and meal frequency reduction.
So, what is the most important thing to do, to avoid heart disease? In my opinion, there is no single most important thing. There are over a dozen very important things. Strictly cutting out the bad stuff is critical. Being vegan most days or most weeks. Cut out the salt, oils, and simple or refined carbs. Emphasize lots of veggies. It is helpful to eat a large salad, even a small salad before every meal. Be very lean. Exercise. Lots of sleep. Do not eat ideally 4 hours before going to bed. Get hungry between meals. Do not eat until you are stuffed.

For the first case history listed, the heart disease sufferer had better results on the Eat To Live (Fuhrman) program, compared to "Fit For Life" low fat vegan program.

I had similar results, except I had no symptoms of heart disease. My improvement is based on IMT results (ultrasound of the carotid arteries). I had better results on Eat To Live, than on Pritikin.

The title of an article on page 62 of the February Scientific American, "The Myth of Antioxidants", grabbed my attention. But the article agreed with all that we advocate.
"The hallowed notion that oxidative damage causes aging and that vitamins might preserve our youth is now in doubt." On the top of page 65 "Epidemiological studies show that people who eat lots of fruits and vegetables, which are rich in vitamins and other antioxidants, tend to live longer and are less likely to develop cancer compared with those who do not."
The article then discusses several studies that show that antioxidant SUPPLEMENTS often are harmful, in randomized, double blind studies. Antioxidants from food, are beneficial.
But you know all this already, if you follow Dr. Fuhrman. To read more material on the benefits and dangers of supplements, you may read Dr. Fuhrman's explanation of what he puts in his multi-vitamin supplement (1). Dr. Fuhrman offers items on his website, if it is hard to find, or unavailable, elsewhere. I do not know of any multivitamin that has no vitamin A, vitamin E, beta-carotene, or folic acid, for example, except Dr. Fuhrman's. That's why I take it myself. But I offer the link for information sake only. Dr. Fuhrman's multi contains vitamin K2, for example. K2 is more expensive than K. Studies show that K2 is very effective are reducing hip fractures in the elderly, and K was less effective. I checked Centrum Silver, and it contains vitamin K, not K2. Centrum Silver also contains the harmful vitamins A, folic acid, E, etc. But, if you are living on Ensure and the SAD, maybe you are better off taking Centrum Silver, compared to nothing.
But, back to the Scientific American article, it provides some interesting information suggesting that the theory of aging, due to tissue damage from free radicals, might not be valid. This is interesting info.
The article also said that exercise promotes autophagy. That is wonderful!!! Autophagy was discussed in a Jan 2012 Scientific American article that I discussed in an earlier post (2). Search for autophagy (CTRL-F).
The science lags our nutritarian diet. That is, science is still uncovering wonderful new vistas of benefits created by a mostly whole plant based diet. For example, the new science of epigenetics has uncovered 3 ways that vegetables reduce problems from bad genes and DNA damage.

Rip Esselstyn is the son of Dr. Caldwell Esselstyn, who published the most effective medical treatment of heart disease ever published in any medical journal anywhere. Some discount the study, because there was no control group. Dr. Esselstyn responds that the group serves as its own control, as the group had 48 cardiac events in the 8 years prior to adopting the Esselstyn diet, and 0 cardiac events in the 22 years after. A cardiac event includes anything caused by hardening of the arteries, including increase of angina pain, causing an increase in medication, heart attack, stroke, bypass surgery, stent, etc.
In the interests of full disclosure, one patient died after 8 years on the diet, of cardiac arrhythmia. This is not a heart attack. This patient had extensive heart muscle damage from prior heart attacks, and was told by his cardiologist, before starting the study, that he had less than a year to live.

Dr. Fuhrman's new book "The End Of Diabetes" was just published Dec 26. I pre-ordered it, so I have just finished reading it. Dr. Fuhrman's diet has been working great for me, for over 5 years.
The book has a lot of new information that is fascinating, and helpful for all people, as well as diabetics. I recommend this book, as well as Eat To Live, for all people interested in health.
And, for me, there was a special bonus. In chapter 10, case history #2, is my case history!! No, I don't have diabetes (my father died of diabetes), but I documented my improvement of IMT (carotid artery ultrasound) results, which got worse (increase in atherosclerosis) on another healthy diet, but improved on Dr. Fuhrman's program. So, I am pleased to help document the improvements on Fuhrman's program.
Dr. Fuhrman is getting traction recently. His book "Eat To Live" is a NYT #1 best seller. It is also the best selling book, of any category, on amazon.com. He has been on Dr. Oz several times, recently. Dr. Oz said that Dr. Fuhrman's diet is the best weight loss diet. Hundreds of physicians have emailed Dr. Fuhrman with enthusiastic results from patients. I myself know of 2 diabetics getting off oral medications, because I told them of this diet. I know of 2 people who are getting off hypertensive medication, and have eliminated ischemic chest pain, because I told them about this diet.

I am passing this post on for a fellow from a !Yahoo heart Disease Support group who sent me this in an e-mail.
"Well my diet just took a turn downward. My gastrointestinal doctor has told me I cant eat any uncooked veggies. No more salads, broccoli, collyflower,corn,brussell sprouts or any hard veggie. I have a threatened bowel obstruction that I have to try to keep from haveing surgery on. He said I could have steak only if it is cut up in baby sized bites. My wife jokeingly said she would put things in a blender and he said that would be a good idea. Due to my numerous abdominal surgeries I have alot of adhesions which are causeing an abstruction. It all started with a simple reflux surgery then I had emergancy surgery for a perferated stomach. Then six months later I had a insisional hernia which was done lap. then I had a bowel obstruction and cut open. Then I had all sorts of problems such as distention and would have to go on liquids till it resolved. This got to where I was haveing the problem three times a week. A doctor said that I would have to live with this till it got bad enough for surgery which he thought would be up to two years. Two and a half years later which was nov. of 2011 I had extensive surgery to remove an infective mesh which had perferated my colon and the surgery lasted for over two and a half hours with two surgeons doing the surgery. Three months later I started again with the distention problem and I started myself back on liquids. When it got bad, at least three times a week, I saw the surgeon who did the last surgery and he said he thought it was from the adhesions but run some tests to see. Well he had me see my gastro doc. and here I am all over again. Now I am back to square one till it gets bad enough again and causes a blockage that wont resolve. Anything that might have even a small chance of being hard to digest or clump I cant have. Do you have any suggestions of some good foods???"

Science is finding many whole plant foods to have anti cancer properties. Fruit, including especially berries, are powerful. Recent finding show anti cancer properties of mushrooms and onions. Here is a link about cruciferous veggies.

Note that most people eat very few vegetables, which is why some studies do not show that people eating more veggies, have less cancer. There are not enough people eating enough veggies, for some studies to show an effect.

The new science of Epigenetics is learning some amazing things.
DNA Methylation is the way DNA is programmed to become differentiated cells, within the body. The sperm and egg have DNA that is not methylated. When a cell becomes a pancreas cell (or any other kind of cell), the genes that should not be expressed, become methylated, which deactivates the undesired gene, and leaving the desired genes for the pancreas activity.
But during our life, additional, undesirable methylation can occur. Recall Dr. Dean Ornish' study, showing that healthy diet upregulates good genes, and down regulates bad genes, concerning prostate cancer.
One study showed that obese rats had more obese children, compared to normal weight rat parents. It is believed that the DNA of the obese rats had increased methylation, which was inherited by the rat kids. In this case, DNA methylation is DNA damage. (I do not have a reference for this study.)
This is a very recent non-technical explanation about vegetables helping to prevent cancer.

This is a technical paper working to predict lung cancer for smokers, based on the methylation of 8 genes that suppress lung cancer. If the gene is methylated, it cannot do it's job, and the smoker is likely to get lung cancer. The paper showed that folks who ate veggies, had less methylation of these good genes. Eating more meat and saturated fat also showed a negative affect, as expected from prior research, but the affect was not statistically significant.

This study has identified two dietary variables, leafy green vegetables and folate, along with multivitamin use that could help reduce the incidence of lung cancer by reducing the induction of methylation in the aerodigestive tract of smokers.
These are technical papers which would help understanding of the lung cancer paper. I am only beginning to begin to understand this. It is amazing what science is starting to learn.

In a recent TIME magazine, it mentioned 23andme, a genetic testing company. They simply take a saliva sample, from a kit they mail you. For $99, they do a lot of stuff. I'm especially interested in the APOE E4 gene. If a person has one of these genes, risk of Alzhimers is increased 3X. If a person has 2 copies, risk is 15X. I first heard of this gene in Dr. Daniel Amen's book, Use your brain to change your age. The same gene also raises heart disease risk.

By the way, I don't believe any vegetable oil is beneficial for the brain, except fish oil or algae oil, providing Omega-3. Vegetables are healthy, vegetable oils are not. Beneficial fats from nuts and seeds (raw, unsalted) and 1 tablespoon daily ground flaxseed are also valuable.

I had a great time at the Dr. Fuhrman San Francisco Weekend Immersion. I met Dr. Fuhrman and his great staff, for the first time. There were 170 people signed up, and I met as many as I could. It was a wonderful group. There were people of all ages. It was my first Fuhrman gathering. It was fabulous to meet people who had wonderful success stories, with continuing improvement and quest for knowledge.
I flew with a friend from Salt Lake City, who is working to strengthen his heart, and fend off heart disease. I introduced the program to him, so I am honored and humbled that he is taking control of his health, and making this committment.
He also was very impressed with Dr. Fuhrman as an inspirational and knowledgable, and ENERGETIC speaker. We were all impressed with Dr. Fuhrman's courage, when he stabbed himself, cutting vegetables. He opted for a bandaid, when I know I would have had general anesthetic and stitches.
Dr Fuhrman asked the audience how they heard of the diet, and how many people were alreay nutritarians, and how many were brand new to the idea. One woman had lost a great deal of weight already, and looked forward to losing a good deal more. She worked as a receptionist for a physician. Her physician boss actually paid for her to attend!!!
The first people I met were a lovely couple, youngsters a bit younger than me (I am 65 yrs young). They started the program in April. They had lost 50 and 60 pounds. He is off insulin, and is finally starting to feel great. She has tried every program, and is thrilled that this is the first time she is keeping the weight off, and continuing to lose, and not having any cravings. Certainly, we all struggle at times, but usually the diet seems like magic, in how good we feel, and how we do not have cravings.
Another woman attended because her cardiologist recommended it! One woman attending was a physician. Dr. Fuhrman pointed out that he has hundreds of emails from physicians who are advocating his books in their practice. Someone mentioned one physician has a flat screen TV in his waiting room, with a continuous loop of a Fuhrman lecture, playing for his patients.
Since the hotel was the Hyatt Regency Airport hotel, 10 minutes from the SFO airport, we could fly in Friday morning, and fly out Sunday afternoon, no problem.
The food was great. I enjoyed everything, especially the salad dressings. I was afraid I'd gain weight, since I "drownded" the salad with the delicous dressings. For some reason, I did not gain weight, but I sure tried.
Dr Fuhrman ran an exercise class Saturday and Sunday. I thought I was in good shape, but he kicked my "donkey". (Some people call a donkey an "ass".) The exercises were excellent, in that a person can do them gently, or very strenuously. Like jumping in place can be just a little raising and lowering at the knees, or jumping really high. I've added several exercises to my routine, from the weekend. (Fuhrman's Osteoporosis DVD is excellent, by the way. There is an excellent lecture, booklet, and 15 minute exercise routine. Again, the exercise is appropriate for a grandmother, or can challenge an athlete in good shape.)
I have been a Nutritatian over 5 years. I was tickled, that that gave me celebrity status. But I am pleased.

I was at the immersion also. ... One of the really impressive things for me also was meeting ordinary (like myself) people making heroic changes in their lives and bodies/health. THe woman next to me at dinner lost 60 lbs and went off her insulin after only 6 months or so on the program. I met two other women who lost over 100 lbs and it all seemed very 'normal' in that context.

Pomagranates are in peak season now. Prices are at their lowest. I boutght about 12 large pomagranates and am saving the arils (seeds) in freezer bags. I take a skinny tablespoon a day, and it lasts many months.
Wash the skin with soap & water. It's easiest to cut off the top and bottom, score the skin into 8ths. Under water in a large bowl, pry the 8ths apart, and then bend the sections and remove the arils. Surprisingly, very little juice is lost, and you don't have the kitchen sprayed with pomagranate juice.

I have made great use of oatmeal, since it is so easy to prepare, and convenient. I have recently replaced much of my oatmeal with quinoa. I think I've seen an improvement in my workouts, and feeling in general. Anyway, for sure it is good to provide variety for a wider array of beneficial nutrients.

I just wanted to mention again about the great movie Forks Over Knives. If you would like to help motivate a friend to adopt a healthier lifestyle, this often does the trick. I know a couple people who were quite dubious of the whole idea of improving their health with our diet. They finally saw the movie, and then bought 4 more copies of the DVD, to give to friends and family!
Forks symbolizes food, and knives symbolizes surgery and drugs. The movie is quite convincing that food as medicine, is the most effective way to regain our health, and overcome heart disease, diabetes, hypertension, cancer risk and dimentia risk.
Netflix carries it, as well as the forks over knives website.

Dr Fuhrman has been on Dr. Oz a couple times recently. Dr Oz has said that Dr. Fuhrman's program is the best for weight loss, and for health.
That's probably why Eat To Live is now #1 on NY Times best seller list, and Eat To Live is THE best selling book on amazon.com !!
